Guys and Gals, gather around. I’ve found my new favourite chocolate chip recipe and it is unstoppably delicious, plus, it is nutritious, so go ahead and eat them for breakfast if you are in a rush, or eat a handful before bed. You can get the same delicious taste and texture of a classic chocolate chip cookie with this one, but it is:

  • Gluten Free
  • Paleo
  • High in protein
  • Refined sugar free
  • Super chewy and moist
  • Very simple with only 9 ingredients
  • Just simply delicious

I have had these cookies going for the last couple months as I go through a Paleo phase of eating to clear up some health issues. I usually cook a batch every week or two, but they honestly last a few days. That being said, if you are pregnant, postpartum or just generally into batch cooking and freezing, I would double this recipe and freeze half of them.

These are the chocolate chips I like to use. They are sweetened with Stevia, and do contain some dairy, so if you are lactose intolerant or staying away from dairy, choose your chocolate chip appropriately. If you are strictly Paleo, try a variety of nuts and or cocoa nibs instead.

INGREDIENTS

  • 4 tbsp coconut oil
  • 1/4 cup honey*
  • 3 large eggs
  • 1/4 tsp vanilla
  • 4 cups almond flour
  • 4 tbsp collagen powder
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup chocolate chips*

    *Can sub honey for maple syrup, I find honey a little sweater though.
    **Different options include: regular chocolate chips, dairy free chips, cocoa nibs, nuts, raisin, etc.

DIRECTIONS

  1. Add 4 tbsp coconut oil (softened but not fully melted) to 1/4 cup honey. Wisk together until fully combined.
  2. Wisk in 3 eggs, 1/4 tsp vanilla to honey and coconut oil mixture.
  3. To a separate bowl, add 4 cups almond flour, 4 tbsp collagen powder, 1 tsp baking soda, 1/4 tsp salt.
  4. Add dry ingedients to wet ones, mix well (I use my hands to mix it well)
  5. Add chocolate chips, nuts or a mix
  6. Scoop out onto cookie sheet and gently press down (they don’t melt down like classic choco. chip cookies)
  7. Bake at 350 Celcius for 10 minutes (I switch my pans after 5 minutes on the top/bottom rack)
  8. Let cool on a rack.
  9. Enjoy! And try not to eat them all in 1 sitting :p
